- 150 grams vegan butter
- 70g grams Dark Muscovado Sugar, Or brown sugar
- 80 grams raw sugar (mill fine first)
- 250 grams plain flour
- 70 g dairy free chocolate chips

- 1. Preheat oven to 180c, line two trays with your reusable baking mats.
2. Add raw sugar to a bowl and with a hand mixer/food processor/thermomix blend until fluffy (20sec/sp4) then scrape the sides down and blend again (40sec/sp4). The mixture should go pale.
3. Add flour then blend again (20sec/sp3). Mixture should be combined and soft.
4. Add chocolate chips and stir through (5sec/reverse sp3).
5. Place mixture into bowl and place in fridge for 30 minutes. Or roll into a cylinder log, cover with plastic wrap or a baking mat, then chill in fridge, this way you can slice into biscuits before baking.
6. Using a 1 TBS measure, scoop cookie dough mixture and roll into a ball (or slice if using the rolled cylinder log method). Place onto lined tray 5cm apart.
7. Bake for 20 minutes, allow to cool for 10 minutes then move to wire rack.
Tip
Bake for 15 to 20 minutes, depending on the size of the biscuit.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
