Ingredients
Variation Date lime cake
- 1 lime, cut into quarters
- 200 g dates, pitted
- 100 g Butter, roughly chopped
- 100 g raw sugar
- 75 g Dark Brown Sugar
- 2 eggs, at room temperature
- 200 ml sour cream
- 250 g plain or spelt flour
- 10 g baking powder
- 1 tsp vanilla extract

Place lime and dates into TM bowl 10-15 seconds/speed 9. Scrape down sides of bowl
Add butter, sugars and eggs and mix 10 seconds/speed 6
Add sour cream, flour and baking powder and mix 30 seconds/speed 6 using spatula if required
Spread batter into prepared cake tin bake for 35 minutes until a skewer comes out clean.
Top with lemon or lime icing or dust with icing sugar

Just looked at this recipe again and realised there are some other things to note:
This recipe was orginally from the "cooking on a budget" book and I have made it several times because it is delicious!
My kids primary school kids, my friends and my parents love it (and is one of the few cake recipes that I use that caters for all ages and tastes).
The original recipe ingredients included:
100 g raw sugar
70 g dark brown sugar
250 g self raising flour
2 large eggs
1 tsp vanilla
I peel my lime and remove all the pith before adding back just the zest as well as the flesh
Oven is heated fan forced to 160 degrees
And the steps are also slightly different:
Step 1, place lime and dates into TM bowl 10-15 seconds/speed 9. Scrape down sides of bowl
Step 2, add butter, sugars and eggs and mix 10 sec / speed 6, scrape sides and mix for 30 sec / speed 6
Step 3, add sour cream and mix for 5 sec / speed 6
Step 4, add flour, vanilla and baking powder and mix 7 sec / speed 7, scrape sides and repeat if necessary (I usually give it a couple of turns by hand to avoid over beating)
Step 5, spread batter into prepared tin, shake to settle
As a guide, so you can adjust based on whatever tin you are using, my 23 cm round springform needs 45 - 50 mins to cook and it does not dry out.
Nice with a small amount of cream cheese frosting.
This is a variant created as the original had omitted the 100g of raw sugar. Yet to try this out.
