- Ground turmeric
- Coriander seeds
- Cumin seeds
- Fennel seeds
- ½ cinnamon stick
- 1 tsp cloves
- 1 tsp cardamom seeds
- 2 tsp chilli flakes
- 2-3 Curry Leaves

Place
all ingredients into clean, dry TM bowl and roast for 8 minutes at Varoma
temperature on speed 2. When
cooked, allow to cool slightly before milling for 10-20 seconds on speed 9
or until finely ground.
Tip
Will
store in airtight container for up to 3 months. Use as directed in any recipe
that requires curry powder.

I have been making this powder for about 8 years! Love it, flavours are authentic. So easy to make. I add Star Anise but if corse optional

This is my go to. I add more curry leaves and whole fresh chillies as I like it hot
This is a really beautiful curry powder. It is full of aromats and works well in most cuisines. Love it
A nice curry mix.
Great curry powder recipe. Unfortunately my husband is allergic to chilli and anything from the capsicum family, which makes buying curry powder from the supermarket problematic. So it was easy to omit the chilli from the recipe, without too much of a compromise on flavour.

You could crush the pod beforehand, for one tsp of seeds I would guess you will need about 10 pods (this is a guess), however after milling you may have some pod pieces still in the bowl that you will need to remove, they do not always mill down completely. Alternatively you could buy grounded cardamom and add at the end.

Could I use cardamon pods for this? Or do they have they have to be seeds?
Fab mix. I couldn't find curry leaves at my local supermarket so I left them out and was worried it would effect the mix but the taste of the curry was superb with this mix still. Thanks heaps ☺️
