Ingredients
Chicken Fricassee (great with Smoked Chicken)
- 200 gram carrots
- 100 gram celery stalks, 1 inch slices
- 200 grams onions, (2 large) cut into eighths
- 60 grams Butter
- 1 tsp salt
- 30 grams cornflour
- 100 gram frozen peas, (approx 1 cup)
- 200 grams Milk
- 100 grams Boiling water
- 1 tsp Maggi Green Herb Stock, (or use TM Vegie paste)
- 2 heaped tbsp fresh parsley leaves, chopped
- 1/4 tsp pepper
- 500 grams chicken breast, raw, OR SMOKED CHICKEN, or leftover cooked chicken, cut into 1 inch cubes
- 100 grams button mushrooms, sliced (OPTIONAL)

- (chop parsley first if you wish, and set aside)
Place carrot, celery and onion into TM and chop for 2 secs, speed 5.
Add butter and salt and saute for 8 min, Varoma temp, REV speed 1..
Meanwhile, put electric kettle on to boil with a litre of water. When it is boiled, pour some over frozen peas to thaw and warm them. (Also, cook potatoes or rice to serve alongside).
Add cornflour to TM and cook for a further 3 mins, 100 degrees, REV speed 2.
Tare scale. Weigh in 100g boiling water, Milk, Herb stock powder, parsley, pepper. Cook for 6 mins, 100 degrees, REV speed 2.
Add CUBED RAW CHICKEN. Cook for 5 mins, 100 degrees, REV speed 2. (Skip this step if using precooked or smoked chicken. Just add it at the next step.)
Add peas, (Cooked Chicken), and mushrooms if you wish, then cook for a further 5 mins, 100 degrees, REV speed stir, until thoroughly heated through.
Put in Thermoserver to keep warm until ready to serve, with cooked rice.
Alternatively put in a casserole dish and top with mashed potato, and put in a hot oven for 10 minutes.
Tip
This is a very quick meal, yet sometimes I make it earlier in the day and put in a casserole dish and top with mashed potato, then heat in the oven later for dinner.
It freezes well like this too, for a ready made meal.
Leftovers are lovely in toasted sandwiches!
