- 100g Almonds, whole
- 80g Butter
- 100g brown sugar
- 45g golden syrup
- 80g rolled oats
- 1 Tbsp flour
- 1 tsp vanilla
- 1 Tbsp Milk

Chop Almonds 5 sec / Speed 5
Spread almonds over baking sheet, lined with baking paper, and pop into the oven (3rd shelf) to toast while you prepare the rest of the recipe...
Heat butter Varoma temp/9 mins/speed soft "Gentle stir setting"
Add Brown sugar, Golden Syrup, Rolled Oats, Flour, Vanilla and Milk. Mix 10 secs / Speed 7.
Remove toasted almonds from the oven, and add to the mixture. Mix 5 secs / Rev "Counter-clockwise operation" / Speed 5.
Drop level teaspoons of the batter onto lined baking sheets, spaced about 10cm apart (makes 3 rows of 5 cookies). Bake one tray at a time for 7 minutes...cookies should be golden brown all over and slightly darker at the edges.
Transfer the baking sheet to a cooling rack and let sit until the cookies firm up (about 7 minutes). Using a knife/spatula, gently transfer the cookies to wire racks until cool.
Turn Oven to 180degC Fan bake
Tip
With these lovely wee cookies, don't think 'bigger is better'. Resist using more batter than the recipe calls for, as the batter will spread significantly while baking. The batter may start to get stiff while you're scooping and baking the cookies, but that's ok.
The cookies go very nicely with icecream for dessert.
Or use them as the final/top decoration on a plated dessert...
