Ingredients

Black Bean and Sneaky Pork (or not) Nachos

  • 20 grams extra virgin olive oil
  • 2 small onions
  • 3 cloves of garlic
  • 1 jalapeño chilli
  • 4 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons Ground Coriander
  • 2 400grm cans of black beans, drained
  • 1 large red capsicum, chopped
  • 1 cans chopped tomatoes, chopped
  • 140 gram tomato paste or passata
  • 250 grams pork mince, optional
  • 1 Avacado, chopped
  • 1 lime, juiced
  • 1 bunch fresh coriander, chopped

  • 1 tablespoons Stock Concentrate, optional

Recipe's preparation

    Black Bean and Sneaky Pork (or not) Nachos
  1. Place onion, garlic and chilli into mixing bowl and chop 3 sec/speed 9. Scrape down sides of mixing bowl with spatula.
    Add oil and cook 5 min/100°C/speed 2, without measuring cup.
    Add paprika, coriander, cumin, tomato paste/passata, capsicum, diced tomatoes and stock concentrate.
    Insert simmering basket into mixing bowl, weigh mince into it and cook 15 min/120°C/speed 2.
    Stir mince with spatula to break up and ensure even cooking. Add beans to the jug, then cook for a further 15-20 min/120°C/speed 2/Reverse or until cooked through.
    Transfer mince and sauce into the jug with the sauce and stir to combine.
    Smash avacado and add lime juice and salt to taste to make fresh guacamole to serve.

Tip

This is beautiful served with fresh guacamole, coriander leaves and sour cream. You can use corn chips or wraps as accompaniments.
