Ingredients
Spiced pear jam and chorizo
- 1 garlic clove
- 3 cm piece of fresh ginger, peeled
- 1 lemon, zest only, no white pith
- 430 g pears (approx. 3-4 pears), cores removed and cut into quarters
- 1 apple, core removed and cut into quarters
- 1 pinch saffron threads
- 1/2 tsp Ground smoked paprika
- 40 g lemon juice (approx. 1 lemon)
- 200 g raw sugar
- 600 g chorizo (approx. 3-4), thinly sliced

- Place garlic, ginger and lemon zest into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add all remaining ingredients, except chorizo, and cook 35 min/100°C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid. Scrape down sides of mixing bowl with spatula.
- Cook for a further 10 min/Varoma/speed 2, placing simmering basket instead of measuring cup onto mixing bowl lid. Transfer jam into a hot-rinsed storage jar with a sealable lid and set aside to cool slightly.
- Place a medium-sized non-stick frying pan over high heat and add chorizo to pan. Fry for 2-3 minutes turning over occassionally until sizzling and crispy on both sides.
- Serve chorizo warm with Spiced pear jam on the side.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
