  • 150 grams dried apricots, (Sulpher Free is better)
  • 60 grams Shredded coconut
  • 70 grams coconut oil
  • 10 grams vanilla extract

Recipe's preparation

  1. Place ginger in Closed lid"Closed lid" , mill 5 seconds/speed 8, scrape sides of bowl and repeat.

  2. Add almonds and apricots in Closed lid"Closed lid" and mill 9 seconds/speed 9. Add coconut, coconut oil and vanilla. Blend Counter-clockwise operation"Counter-clockwise operation" 15 seconds/speed 4. Scrape down sides and repeat until combined.

  3. Roll balls into 14 even pieces

  4. Protein balls are approximately 120-150 calories per serving. To be eaten as a "snack" and great for kids lunchboxes!!

    Next time I make I will only use half the amount of coconut oil. Great flavour, just oily.

    Could not roll mixture into balls as it just crumbled in my hands. I then put 2 tablespoons of honey to sweeten and to make the mixture form into balls and it still did not work. I ended up having to make it into a slice. Did you miss a ingredient to make it stick together? I did like to hint of ginger in the mix.
