Ingredients
Cupcake
- 250 grams Butter, softened to room temperature
- 300 grams caster sugar
- 2 teaspoon Vanilla Bean Paste
- 4 eggs
- 450 grams Self Raising Flour
- 250 grams full cream milk
Vanilla Frosting
- 300 grams pure icing sugar
- 150 grams Butter
- 1 tablespoon Milk
- 1 teaspoon Vanilla Bean Paste

Preheat the oven to 180 degrees, prepare 2 muffin trays by lining them with cupcake cases
Place the butter, sugar and vanilla bean paste in the bowl, 30 sec/Sp5 until the light and fluffy.
Set the speed to 5 and add the eggs one at a time until they are all incorporated.
Add the flour and milk and mi for 20 sec/Sp5
Divide the mixture into the prepared cases using a spoon. Bake in the pre-heated over for 15-20 minutes or until lightly golden brown and springs back when pressed in centre
Add butter & milk, blend speed 6 20 secs. For a lighter forsting, add the butterfly and beat for a further 15 secs on speed 4
Pipe or spread onto cooled cupcakes, decorate with sugar crystals and sugar flowers

Tip
You can add fresh or frozen raspberries to the batter, by placing them into the mixure once placed in the cupcake cases so that you have a raspberry surprise when biting into the cupcake

This is now my go to cupcake recipe! First time making cupcakes in my TM and they were delicious. I halved the recipe as 24 cupcakes would have been too much, but they were gone in days! I mixed everything on speed 4 with the reduced ingredients to avoid splatter. Just made my second batch for a picnic and they were a hit!
I can FINALLY say i have found the best vanilla cupcake thermy recipe. I'm so happy!!! Amazing!!! (Only change was that i used self raising cake flour)
