Ingredients

Cake Batter

  • 190 grams self rasing flour
  • 110 grams caster sugar
  • 100 grams unsalted butter
  • 2 eggs
  • 30 grams Milk
  • 1.5 teaspoons vanilla extract or paste

Rainbow Buttercream

  • 250 grams unsalted butter
  • 500 grams icing sugar
  • 1 teaspoon Vanilla Paste
  • 1 drop Red food gel
  • 1 drop Blue food gel

Piping bag & nozzle

Recipe's preparation

    Cake Batter
  1. Preheat oven to 160C.

    To make cupcake batter place all ingredients into TM bowl & mix for 1 minute speed 5. Scrape bowl & repeat.

    Evenly distribute the batter into the cupcake cases.

    Tip. Only fill cupcake cases 1/2 way with the batter.

    Place in oven & bake for 22 minutes.

    Allow time for cupcakes to cool before icing.

     

  2. Rainbow Buttercream
  3. Place butter into TM bowl & mix for 20 seconds speed 5.

    Add approx 1/2 of icing sugar into TM bowl & mix for 20 seconds speed 5. Scrape bowl.

    Add remaining icing sugar & vanilla paste and mix for 25 seconds speed 5. Until icing is smooth & fluffy.

    Divide icing minute between 2 bowls. Add 1 drop of red food gel to 1 bowl & 1 drop of blue food gel to the other bowl. Mix well.

    Prepare piping bag with prefferd nozzle I used the star nozzle.

    Using a long knife place a strip of blue icing on 1 side of the bag & repeat with pink icing on the other side 

    Pipe icing onto cooled cupcakes using a swirling motion starting at the middle & working outwards.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
