- 200 grams Butter
- 400 grams castor sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 100 grams Dutch Cocoa
- 100 grams plain flour
- 90 grams macadamia nuts
- 90 grams Chocolate Drops

- - Preheat oven to 160 degrees.
- - Weigh in butter in small cubes. Melt 50 degrees, two minutes, speed 1.
- - Add sugar and egg to the melted butter mixture mix 10 seconds, speed 5; then 50 degrees two minutes speed 1.
- - Add cocoa, 10 seconds speed 5. Scrape down sides.
- - Add flour, 20 seconds speed 3. Scrape down sides.
- - Add nuts and chocolate drops then mix "Counter-clockwise operation" , 1 minute, speed 1.
- - Spread into a square baking tray lined with baking paper and bake for 45 minutes.
- - Remove from the oven and allow to cook while still in the tin.
- - Dust with icing sugar before cutting into small portions.
Fudge Brownies
Tip
I adapted this recipe from the Equagold recipe list in New Zealand. They supply a premium cocoa called Equagold Premium Dutch Cocoa which can be hard to source but worth it. Otherwise just use the finest cocoa you can find, it does make a difference.
The traditional American recipe has Pecans or Walnuts but I prefer the Macadamias for the creamier texture.
