Ingredients

Anzac lactation biscuits

  • 135 gram rolled oats
  • 130 grams dessicated coconut
  • 125 grams plain flour
  • 165 grams brown sugar
  • 110 grams Flaxseed Meal
  • 1.5 - 3 level tbsp brewers yeast, Depending on your prefered taste
  • 3 level tbsp golden syrup
  • 200 grams Butter
  • 2 level teaspoons bicarbonate of soda
  • 4 level tbsp Boiling water

Recipe's preparation

  1. 1. Preheat your oven to 180°C or 160°c fan forced. Line a baking tray with parchment paper and set it aside.

    2. Add the golden syrup and butter to the Thermomix bowl. Melt for 3 minutes at 60°C on speed 2.

    3. Place the rolled oats, desiccated coconut, plain flour, brown sugar, flaxseed meal, and brewer's yeast into the Thermomix bowl. Mix for 10 seconds on speed 5 to combine the ingredients.

    4. In a separate bowl, dissolve the bicarbonate of soda in the boiling water. Add this mixture to the Thermomix bowl and mix for 5 seconds on speed 3 to incorporate.

    5. Scoop 1 tablespoon of mixture onto tray and flatten into 6cm rounds. Continue until mixture is gone.

    6. Bake in the preheated oven for approximately 10-12 minutes or until golden brown.

    7. Once baked, remove from the oven and allow the biscuits to cool in the tray for a few minutes. Then, transfer it to a wire rack to cool completely.

Tip

Enjoy with a nice lactation hot chocolate or tea and watch the magic
Can be rolled into a log and frozen for up to 6 months in deep freezer and cut when ready to bake.
