Ingredients

  • 180 grams Self Raising Flour
  • 50 grams buckwheat
  • 50 grams rolled oats
  • 50 grams bran cereal
  • 30 grams Shredded or shaved coconut
  • 180 grams Milk
  • 150 grams raw sugar
  • 2 eggs
  • 70 grams extra light olive oil
  • 1/2 teaspoon baking powder
  • 200 grams Finely Sliced Apple (skin on)

Recipe's preparation

    1. Pre-heat oven to 180°C.
    1. Mill Buckwheat, speed 9 for 30 seconds.  Put aside in a bowl.
      1. Blend Oats and Bran, speed 5 for 6 seconds.  Add milled Buckwheat and all remaining ingredients, except Sliced Apple.

         

    1. Mix for 40 seconds on speed 4-5.
    1. Add Sliced Apple, mix for 10-15 seconds on speed 1 using spatula to incorporate.
    1. Spoon into greased muffin tins and bake in pre-heated oven for 20-25 minutes or until golden brown.

    Oh dear!!! thank you for letting me know, I've now fixed the receipe.  I do hope noone made them using Brandy  :O

    Haha - have to chuckle at auto correct!!  Brandy in these muffins??  Could be a recipe for disaster.
