Ingredients

Banana Bread

  • 2 rolled oats, Cups
  • 1 teaspoon cinnamon, Powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 pumpkin seeds/pepitas, Cup
  • 1/4 cranberries, dried, Cup
  • 2 tablespoon chia seeds
  • 1 pitted dates, Cup
  • 1/2 Unsweetened non dairy milk, Cup, I used almond
  • 2 teaspoons vanilla, Extract
  • 3 Bananas (ripe), Large

Recipe's preparation

  1. In your TM bowl process 2 cups of oats SP 9/3 seconds. Set aside.

    Without washing bowl, process dates, SP 9/ 20 seconds. Add milk, vanilla and peeled bananas, blend SP 5/ 5 seconds.

    Now add oat flour,cinnamon,baking powder,salt,pumpkin seeds,cranberries and chia seeds. Mix Counter-clockwise operation"Counter-clockwise operation" SP 4/10 seconds..

    Pour into a greased loaf tin. Mine is 22 cm x 12 cm. Add extra seeds on top or leave as it is  Bake 180 for 1 hour.

    Really yummy!! 

    I used raisans instead of cranberries as I didn't have them and it tasted just as good. I left mine in the oven for an hour and 10 minutes and the knife was still not coming out clean but I didn't want to burn the outside.

    Tasted great warm but looking forward to trying it when it's cooled down.

    Surprisingly good! Was a bit sceptical as there is no oil, butter or eggs as to how this would turn out. I confess I used 100g of coconut sugar instead of dates as I didn't have any, and I used low fat milk instead of almond milk ( again didn't have any). It was a bit gluggy, but when I toasted slices, and buttered fairly liberally, it was delicious! Just like a complete breakfast in a slice!!
