Ingredients
Banana Cake
- 100 g Raw or White Sugar, (1/2 Cup)
- 130 g Butter, Softened
- 1 tsp vanilla extract
- 3 Medium Overripe Bananas, Peeled
- 1/4 tsp Bi-carb soda
- 2 eggs
- 300 g Self Raising Flour, Sifted (2 Cups)
- 125 g Milk, Whole, Half or skimmed (1/2 Cup)
Cinnamon Sugar Crust
- 20 g Butter, Melted
- 4 tbsp white sugar
- 1/4 tsp cinnamon

Preheat oven to 180deg celcius.Line a 20cm round baking tin with baking paper.
Place sugar in TM bowl and mill 7 sec/speed 9
Add Butter and Vanilla and process 20sec/speed 4Scrape down sides and mix for another 30sec/speed 3 or until light and creamy
Add Banana, Bi-carb and eggs and mix 20sec/speed 4 or until combined.
Add S/R Flour and milk and mix 20sec/speed 5 or until just combined.
Add to prepared baking tin and bake for 40-50 mins or until skewer inserted comes out clean
Melt the butter in microwave for 15-20sec. Brush melted butter over cake top once removed from oven.Sprinkle with lots of cinnamon sugar. Set aside to cool.

Tip
This is the first cake I ever learnt to make from scratch with my Nanna. Great way to use up those left over daggy bananas. Alway comes out soft and moist.It goes well with cream cheese frosting from the EDC or BCB as well. Works in TM5 model also.
