Lemon Crust Topping
- 1 zest of lemon, no white pith
- 100 g sugar
- 3 tbsp Butter, Melted
Cupcakes
- 1 zest of lemon, no white pith
- 150 g sugar
- 150 g Butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 300 g S/R flour
- 120 g Milk
- juice of 1 lemon
- 100 g blueberries, Frozen

Mill Sugar and Lemon Zest 10sec/Spd 9. Set aside in a bowl.
Preheat Oven to 160deg and line a 12-hole muffin pan with cupcake papers.
Mill Sugar and Lemon Zest 10 sec/Spd9. Scrape down Sides
Add Butter and mix 10/spd 4 until combined. Mix for further 20-30sec/Spd4 until light and creamy. Scrape down bowl once or twice in between.
Add eggs and vanilla and mix 10/Spd4 until incorporated. Scrape down sides.
Add in S/R Flour and milk and mix 10-20sec/Spd3.
Add in lemon juice and mix for another 5-10Sec/Spd3-4
Add in Blueberries and fold through with Spatula.
Add mix to prepared tray and Cook for 20 mins or until skewer inserted comes out clean.
Melt butter in a bowl and using a pastry brush, one at a time coat top of cupcake then dip into the sugar and lemon mix. Set aside to cool. Crust will form.

Where are you supposed to use the butterfly attachment ?
Very nice. Used your recipe as a base....subbed out the milk for coconut milk and the blueberries for white choc chips (naughty I know, but it was hubby's request). Will make next time with blueberries and white choc chips . Thanks!
