  • 100g dates
  • 100g Butter
  • 230g Milk
  • 130g plain flour
  • 160g spelt flour
  • 4tsp baking powder
  • 1tsp cinnamon
  • 1 egg
  • 80g Rapadura Sugar
  • 3 ripe bananas
  • 80g choc chips

Recipe's preparation

  1. Preheat oven to 180C. Line muffin tin with muffin cases.

    Weigh dates into TM bowl and chop on speed 7 for 10 seconds. Set aside.

    Add butter to TM bowl and melt for 2 mins, 60C, speed 2.

    Add remaining ingredients and mix for 20 seconds, speed 3-4.
    You may need to scrape down the sides and repeat for another 10 seconds 
    to ensure the ingredients are combined.

    Spoon into muffin cases and bake in preheasted oven for 15 minutes.

     

    Makes 12-18 muffins depending on how much you fill the cases.

    This is a nice recipe, i like all the flavours. I had some left over white choc chips so i sprinkled them on top

    Made these today and my children devoured them after school this afternoon.

    Next time I might try mixing all the wet ingredients and the bananas before adding the dry ingredients.  I had broken the bananas into quarters when I added, but still had some chunks of banana at the top of the mix after mixing.  Not a huge problem though.
