Ingredients
Banana Sultana Bread
- 120 grams olive oil
- 140 grams Maple syrup, or honey
- 4 bananas, ripe
- 4 eggs
- 130 grams Milk, can use standard milk or substitute with almond milk etc
- 2 teaspoons Bi Carb Soda
- 2 teaspoon vanilla extract
- pinch of salt
- 1 teaspoon cinnamon
- 240 grams Wholemeal or Whole wheat flour
- 230 grams Plain White Flour
- 100 grams sultanas, optional
- 20 grams Coconut, optional
- handful of pepitas, optional

- Preheat oven to 160 degrees celsius.
Prepare extra large loaf tin.
Add Olive oil and Maple syrup to TMX, mix sp4 5sec. Scrape down sides.
Add bananas and eggs, mix sp5 6sec.
Add Milk, bi carb, vanilla, salt and cinnamon, mix sp4 3sec.
Add flour. Mix sp 4 20sec, use spatula to assist. scrape down sides. Mix sp4 10 sec, use spatual again.
Add sultanas and coconut (or any other extras), mix sp4 10sec, use spatula to assist.
Pour into prepared tin. Sprinkle pepitas on top.
Bake for 1 hour 5 minutes or until cooked.

Tip
I have a large loaf tin that I use and freeze half of the loaf in slices. ALternatively you could halve the recipe and use a standard loaf tin or 1 loaf tin nd a muffin tray (reduce cooking time).
Add or substitute any other extras such as nuts, seeds, choc chips, dried fruit etc.
