Ingredients
- 120 g Butter, softened
- 110 g castor sugar
- 2 eggs
- 2 Ripe Banana's, cut into 1/4
- 100 g Rolled Oats, optional
- 1 teaspoon bi-carb soda
- 1 tablespoon hot milk
- 280 g Self Raising Flour
- 80 g Choc Chips, optional
- 20 g Cocoa Powder, optional

I'm cooking this todayRecipe's preparation
Insert Butterfly, Add Butter and Castor Sugar and beat 2 min, Speed 4. Scrape down sides.
Add Banana's, Rolled Oats and eggs and beat 30 secs, Speed 4.
Mix Hot milk and Bi-Carb together and add to mixture. Mix 10 secs, Speed 4.
Add S/R Flour and Choc Chips and mix 1 min, Speed 1-2, until just mixed.
Pour into Muffin Tray and cook for 15-20 mins or until lightly brown.
Optional: Lightly dust with icing sugar.
Preheat oven 180 deg. Lightly grease trays or add muffin cups

Oh these are so light & fluffy!!!!!
I only mixed the flour etc for 30 secs, scraping down twice.
i added the choc chips but omitted the cocoa. Love them and they'll be great for kids' lunch boxes, if they last that long....
