Ingredients

  • 500 g water
  • 250 g pumpkin, chopped into 2cm cubes
  • 200 g sugar
  • 100 g Butter, softened
  • 1 teaspoon Vanilla bean paste or extract
  • 280 g plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 150 g dark chocolate chips

Recipe's preparation

  1. Put water into bowl, place pumpkin into the Varoma, steam for 15 min/Varoma/speed 2 or until cooked. At this point, you can either set the pumpkin aside to cool or continue onto step 2 (see Tip).

     

  2. Preheat oven to 190 degrees C. Discard water. Place cooked pumpkin in bowl and mash 5 sec/speed 5. Scrape down sides of bowl. Repeat until mash is smooth.

     

  3. Add the sugar, butter and vanilla to the bowl and mix 20 sec/speed 4. Scrape down sides of bowl.

     

  4. Add the flour, baking soda and ground cinnamon to the bowl and mix 20 sec/speed 4. Scrape down sides of bowl.

     

  5. Add chocolate chips to the bowl and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3.

     

  6. Line 2 or 3 baking trays with baking paper or use your Oven Thermomat. Drop tablespoons of mixture onto lined trays. Bake for 12 to 15 minutes or until set. Let cakies cool on a rack.

     

Tip

This recipe came to us many years ago through our childcare centre, the origin of the original recipe is unknown. These are a kind of a cross between a cake and a cookie, and have become known as 'cakies' in our family.

The texture of the cakies will vary depending on whether the pumpkin is cooled, cooled pumpkin results in a more cookie-like texture, hot/warm pumpkin results in a more cake-like texture (If I had to pick, I probably prefer the cookie-like texture with the cooled pumpkin).

    Oh my Lordy.... Yum yum! I followed Lu and thermo's idea of replacing the sugar with coconut and maple syrup and used broken pieces of 90% choc because that's all I had.

    Thank you for this recipe they are lovely! I just made a  healthy version of these & they are yummy! 

    I used 50g  coconut sugar instead of white sugar, added this to the pumpkin to break up. I also added 20g maple syrup. Then, I used 65g coconut oil instead of butter & only used 75g dark chic chips. Mine are also GF as I used GF flour.  

    I must have made mine much smaller as I got 35 cakies from this recipe. Mine came out like soft rock cakes. Yum!

    Great recipe! Hubby and I loved them. The kids are yet to try them, however I did put them in the lunchboxes this morning and I have no doubt they will love them too. I used 150g of sugar which was enough sweetness for me. Thanks for posting! tmrc_emoticons.)
