  • 120 g unsalted butter, room temperature
  • 6 eggs
  • 300 g self-raising flour
  • 250 g blueberries, fresh or frozen, thawed

Recipe's preparation

    Blueberry Butter Cake
  1. Pre-heat oven to 180C.  Lightly grease and line a 20 x 30cm cake tin or 23cm springform pan with baking paper.

  2. Place sugar into mixing bowl and mill 10 sec/speed 9 to make icing sugar.

  3. Add the butter and eggs and mix 30 sec/speed 6.

  4. Add the butter and eggs and mix 30 sec/speed 6.

  5. Add the flour and mix 20 sec/speed 6.

  6. Pour batter into prepared cake tin.  Layer the blueberries on top of the batter. 

  7. Place into pre-heated oven and bake for 40 min.

Tip

Other fresh fruit can be used ie. sliced peaches or apricot halves with cut side up, rasberries or sliced strawberries.

    Lovely Flavour

    My first attempt in making a cake in the thermomix. The texture was a little dry, I thought maybe add less egg and add milk instead for a lighter texture. The flavours were good I used homemade butter (made in thermomix). I used frozen raspberries and served it with orange custard also made in thermomix. Yum! I thought this was better as a dessert cake.Next time I might add some lemon rind or cinnamon spice to mixture for extra flavour but over all really nice cake.
