Blueberry Lemon Crisp Bars
- 150 g Butter, softened, cubed
- 280 g plain flour
- 100 g brown sugar
- 1 pinches salt
- 140 g plain flour
- 100 g rolled oats
- 180 g brown sugar
- 1 tsp baking powder
- 1 pinches salt
- 150 g Butter, softened, cubed
- 2 cans condensed milk
- 8 egg yolks
- 2 tbsp lemon zest, grated
- 250 g freshly squeezed lemon juice
- 280 g blueberries
- 2 tbsp sugar
- 1 tbsp cornflour
- 2 tbsp freshly squeezed lemon juice
- 1 tsp Vanilla Paste

- Add 150g butter, 280g plain flour, 100g brown sugar, pinch salt to bowl. Combine 20 seconds at Speed 4.
- Press base mixture into 9"x13" baking tray. Bake at 150C for 15 minutes. Set aside to cool.
- Add 140g plain flour, 100g oats, 180g brown sugar, 1tsp baking powder, 150g cubed butter, pinch salt to bowl. Combine for 10 seconds, speed 6.
- Set aside to use in assembly.
- Add condensed milk, egg yolks, lemon zest, 250g lemon juice to bowl. Add butterfly to bowl. Combine for 20 seconds at speed 4.
- Set aside to use in assembly.
- Add blueberries, sugar, cornflour, 2 tbsp lemon juice and vanilla to bowl. Cook 5 minutes 90C Speed 2
- Set aside to use in assembly
- Add layer of crisp topping onto base (using 1/3 of mixture)
- Add all of the blueberry filling on top of crisp mixture. Spread evenly.
- Add another layer of crisp topping (using another 1/3 of the mixture)
- Add all of the lemon filling on top of crisp mixture. Spread evenly.
- Add remaing 1/3 of the crisp mixture to the top.
- Bake for 35-40 minutes at 180C
- Refrigerate for a couple of hours before slicing.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
