Ingredients

Leftover blueberry smoothie mixture

  • 150 grams blueberries, frozen or fresh
  • 2 heaped tablespoons Protein Powder, vanilla flavour
  • 200 grams Milk

Muffin batter

  • 150 grams Butter, unsalted
  • 2 --- eggs
  • 130 grams castor sugar
  • 300 grams plain flour
  • 2 level teaspoons baking powder

Recipe's preparation

    Blueberry smoothie mixture
  1. Add all ingredients for blueberry smoothie into bowl. Mix for 30 seconds, speed 6. Mix on a lower speed, such as 3, if you like chunks of blueberries in your muffins.

    Alternatively, after you have drank your smoothie - just add any leftover mixture to the bowl.  Top up with milk and blueberries if needed, then mix as above. 

  2. Muffin batter
  3. Preheat oven to 180° C fan forced. Line a 12 hole muffin tray with muffin cases. 

  4. Place butter, eggs, castor sugar, plain flour, salt and baking powder into bowl with the leftover blueberry smoothie mixture. Mix 30 seconds, speed 4. Scrape down sides of the bowl. Mix for a further 5 seconds, speed 4. 

  5. Transfer batter into prepared muffin tray. Bake muffins for 15 minutes or until light golden brown. Allow muffins  to cool slightly before removing from tray and place on a cooling rack. 

    Enjoy!

Tip

Frozen blueberries make a thicker smoothie.

Add additional blueberries on top of each muffin before placing in oven to bake. 

Try using other leftover smoothie mixtures such as banana and raspberries etc.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
