Recipe's preparation

  1. Preheat oven to 180° (IMPORTANT, oven needs to be preheated and at temperature before baking)
    Line two trays with baking paper or silicone baking mats.

    Add to bowl 50 gms raw sugar, 50 gms unsalted butter, 50 gms golden syrup, cook 5 mins/100/speed .5

    Add 50 gms plain flour and 1/2 teaspoon of ground ginger. Mix 20 seconds/speed 3.5
    scrape down the sides and mix for a further 10 seconds/speed 3.

    Place half a tablespoon onto prepared baking trays, four per tray evenly spread out, (no need to spread they will expand when cooking - 10-12 cm). Bake for 10-15 minutes at 180° until dark brown in colour and lacey. Remove from oven and rest for two minutes or until able to lift from tray and shape, shape around silicone spoons forming a tube (not too tight or they may get stuck), they will set quite quickly, you can leave them to set on the spoons, or move to a silicone mat and place joined side down.

    Fill with cream prior to serving, delicious when served with a baileys or kahlua infused cream.(300 ml cream, 20-30 gms Baileys, approximately 90 seconds speed 3) may be more or less depending on the freshness of your cream.

    Store in an airtight container. (No filling)

Tip

If the mixture becomes firm before finished baking, just roll mixture into balls and flatten lightly.

Can also be shaped into baskets, use the base of a small glass/yoghurt jar/muffin tray (upside dow)
