Keto Strawberry Cheesecake

  • 140 grams almonds
  • 40 grams macadamia nuts
  • 50 grams Butter
  • 70 grams Monkfruit sweetener, Or other keto friendly sweetener
  • 250 grams strawberries
  • 500 grams cream cheese
  • 1 tsp Vanilla Paste
  • 200 grams cream
  • 2 tbsp hot water
  • 2 tsp gelatin

Recipe's preparation

  1. Line base and sides of round springform baking tin.

    Add 140 grams almonds and 40 gms macadamias. 5 seconds/speed 9.
    Add 50 grams butter (cut into 2cm pieces) and 40 grams monkfruit sweetener, 10 seconds/speed 6.

    Press into base of tin evenly and bake at 180° degrees for 20 minutes to create biscuit base, biscuit is done when the colour has darkened slightly. (Biscuit will be soft and spongy but will firm when cooled)

    Add to bowl 200 grams strawberries and 30 grams monkfruit sweetener, 5 seconds/speed 5, scrape sides and mix again 5 seconds/speed 5.
    Insert butterfly whisk.
    Add 500 grams softened (take out of fridge 30 minutes prior) cream cheese, 1 TSP vanilla paste, 200 grams of cream. Mix 1 minute/speed 3, scrape sides and mix for 30 seconds/speed 3.
    Combine in glass water and gelatine, mix well with spoon, set 30 seconds/speed 3 and pour gelatine mixture through MC hole.
    Pour mixture onto biscuit base in tin and decorate with leftover 50 grams of strawberries.
    Chill for 6 hours.

    Great recipe & very easy to make, I had an overload of Apricots that I used instead of the strawberries & it was delicious. The fruit ratio was just right but with the stone fruit it needs to be mushed up & set aside until the step to add fruit.
    Will definitely make again
