Ingredients

  • 100 g buckwheat
  • 50 g rolled oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 1 tablespoon Rapadura or Raw Sugar
  • 2 eggs
  • 250 g Milk
  • 1 medium apple quartered, peeled

Recipe's preparation

  1. Mill buckwheat and rolled oats for 30 seconds on speed 9.  Remove and set aside.

  2. Chop apple for 4-5 seconds on speed 5. 

  3. Add remaining ingredients along with milled buckwheat and mix for 30 seconds on speed 5.  Transfer to a jug, cover and refrigerate for 30 minutes.

  4. Heat a non-stick pan over a medium-low heat.  Lightly grease pan with oil or butter and using 1Tbl of batter at a time cook pikelets, in batches, for 1-2 minutes or until small bubbles appear on the surface.  Turn and cook for 1 minute on the other side, or until golden and cooked through.

These were apapted from a Jude Blereau recipe

 These are nice topped with plain or vanilla yoghurt, or just simply buttered.

    i made these today and they were fabulous! i made some variation though, i made them savoury with carrot, zucchini and spinach and a bit of EDC garam masala and omitted the sweet stuff in there. this is my first buckwheat recipe ever, and it worked great!!! thanks!

    I made these this morning (used no-egg for our family) and they were great! Cooked well, the kids loved them and I love the fact that they have very little sugar in them tmrc_emoticons.) will be making these again!
