Ingredients

CREAM FILLED ECLAIRS WITH CHOCOLATE GANACHE

  • 250 g water
  • 1 pinches salt
  • 100 g Butter
  • 150 g plain flour
  • 4 eggs, large
  • 0.7 litres thickened cream
  • 20 g caster sugar
  • 1 level teaspoons vanilla extract
  • 250 g milk chocolate

Recipe's preparation

    Eclair
  1. Eclairs.
    1. Pre-heat oven to 190-200 degrees celcius. Line 2 baking trays with baking paper.
    2. Place water, butter and salt into thermomix bowl.
    3. Cook for 10 minutes on 100 degrees on Speed 2.
    3. Add flour into thermomix bowl and mix for 35 seconds on Speed 4.
    4. Leave to cool in thermomix bowl for 10 minutes.
    5. Mix on Speed 5 for 40 seconds while dropping eggs one at a time into mixture, through lid.
    6. Spoon pastry into a piping bag / ziplock bag with corner cut off.
    7. Squeeze pastry onto lined baking trays in line of approx 6-8 cms.
    8. Put in oven and bake for 15-18 minutes until puffed up.
    9. Turn off oven and leave door ajar to cool.
    10. Once cool poke hole in the side or cut in half ready for cream filling.
    Cream
    1. Add 600mLs of thickened cream, vanilla and caster sugar to thermomix bowl.
    2. Add butterfly.
    3. Mix on Speed 4 at 40 second intervals until whipped.
    4. Spoon into piping bag or ziplock bag with corner cut off.
    5. Squeeze cream into hole thats cut or onto bottom half of cut eclair. (then place lid on top).
    Ganache
    1. Add 250g of chocolate to thermomix bowl and blitz on Speed 9 for 15 seconds.
    2. Add 100 mLs thickened cream to thermomix bowl.
    3. Melt together for 2mins 30 seconds at 65 degrees on Speed 1.
    4. Spread ganache on top of eclairs.

Tip

- Splash a small amount of water on baking tray before putting in oven.
-Crack eggs into a cup and pour from that into thermomix.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Cooked these today. Easy recipe. Thanks for sharing. Will probably try doubling the recipe next time.

    Made these today only mistake was they were not thick enough, were a little hard to work with. Make sure when you fill the piping bag you make the hole big enough. Next time I will cut the hole to about an inch and a half. Will definately make these again.
