Ingredients

150g Zuchinni, sliced into approx 6 pieces

  • 100 g carrot, Roughly Chopped
  • 125 g raw sugar
  • 125 g olive oil
  • 2 free range eggs
  • 1 tsp vanilla
  • 60 g coconut milk
  • 160 g plain flour
  • 50 g Self Raising Flour
  • 1 1/2 tsp baking powder, heaped
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg ground
  • 1 pinch salt
  • 30 g desicated coconut
  • 30 g rolled oats

Recipe's preparation

    Carrot & Zucchini Lunchbox Muffins
  1. Preheat oven to 200 degrees, Grease Mini Muffin trays and set aside

    Place Zuchinni and carrot into TM bowl and chop 6 secs Speed 5

    Scrape down sides of bowl

    Add Raw Sugar, Olive Oil, Eggs, Vanilla and coconut milk combine together 5 secs Speed 3

    Add the rest of the ingredients and mix 5 secs Speed 4.

    Spoon Mixture into mini muffin trays (i got 30 mini muffins)

    Bake for 20mins

    Allow to cool for 5 mins in muffin tray then turn out on to a wire rack to cool.

Suitable for freezing

    So good! I made large muffins using vegetable oil, yogurt and each had a teaspoon of home made jam in the center. Will make again. 😁

    My daughter made these for her lunch box. She was not happy when I could not stay away from them! Will defintly be a regular bake and about to bake some now for our football canteen.

    These are really delicious. I added some apple and reduced the sugar to 95gms. I also used plain milk, rather than coconut milk. My kids both enjoyed them too

    Wonderful and my picky eaters love them.

    I didnt have quite enough carot and zucchini so subbed in the remaining 40g with Apple. I reduced the sugar to 90g. And used normal milk. Thanks

    Delicious! I used 120g of rapadura instead of raw sugar, wholemeal flour instead of white and ordinary milk instead of coconut. Will make again.

    Yummy and moist.   I used plain milk instead of coconut milk and I only had shreadded coconut and they turned out really lovely.

    Very nice

    Light, moist and really simple to make.  Made 12 'normal' sized muffins which took 20 min to bake.

    My son and I made these last night. They were given the thumbs up by all!! We only added 100g Sugar and 100g oil, the consistency was great and they were so moist! A great lunchbox snack! Thank you for sharing your recipe.
