  • 1 granny smith apple, half to grate, half diced
  • 2.5 Cups almond meal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup coconut milk, Can substitute coconut & almond milk
  • 1 tablespoon chia seeds, Optional
  • 15 gram pepitas, Optional

Recipe's preparation

  1. Heat oven to 180 degrees. Line muffin tin w/ baking cups or use silicone cups

  2. Add carrots to TMX bowl. Chop on speed 6 for 5 seconds then set aside in another bowl

  3. Add half the apple to TMX bowl. Chop on speed 6 for 5 seconds (it's ok if this is chunky)

  4. Add carrots, eggs, coconut milk, almond meal, vanilla, cinnamon, baking soda, salt and seeds if desired

  5. Counter-clockwise operation"Counter-clockwise operation" Mix on speed 4 reverse until combined (do not over-mix this as it will start to scramble the egg)

  6. Fill baking cups and bake for 35 minutes. Top with shredded coconut

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
