Ingredients
biscuit dough
- 150 g raw sugar
- 150 g Pepita Seeds
- 150 g plain flour
- 80 g Whole rolled oats
- 40 g coconut flakes (or dessicated)
- 3 tsp ground ginger
- 55 g LSA meal
- 170 g unsalted butter
- 65 g golden syrup
- 1.5 tsp bicarbonate soda
- 1 tbsp Boiling water

1. Preheat oven to 160°C (fan forced) or 180°C (no fan). Line two baking trays with non stick baking paper and set aside.
2. Mill sugar 2 sec/speed 9.
3. Add pepitas and coconut flakes, coarsely chop by pressing turbo 2-3 times.
4. Add plain flour, rolled oats, LSA meal and ground ginger to mixing bowl and mix 6 sec/speed 2. Remove from mixing bowl and set aside.
5. Add butter and golden syrup to mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.
6. Cook for 2 min/60°C/speed 2, or until butter has melted.
7. In a separate bowl, combine bicarbonate soda and water, then add to butter in mixing bowl.
8. Add the dry ingredients and mix "Counter-clockwise operation" 20 sec/speed 4 or until combined.
9. Form tablespoons of cookie dough mixture into balls. PLace onto prepared trays, 3cm apart. Bake for about 13 minutes, halways through cooking or until golden. Set aside on trays for 5 minutes. Transfer to a wire rack to cool completely.

These are great. I did reduce sugar to 70g and they are still sweet enough
We made these for the second time and are really enjoying the Anzac biscuit like taste and the soft texture of these cookies. The first time we made them we could taste the bicarb so we reduced this to 1 teaspoon and used SR flour which worked well. The recipe didn't say to flatten the balls before baking so we did a bit of both (flattened and not) and both worked out well. Thank you for the recipe and thank you for the very clear instructions.
These turned out perfectly & taste fantastic!! My 2yo & 4yo love them as do my husband & myself. YUM!!
Very yummy, they were a big hit. I used only 100g of pepitas because they're so expensive and 70g of coconut.
They were fantastic, my boyfriend loved them!
