Muffin Batter

  • 100 grams raw sugar
  • 3 Large Ripe Bananas
  • 120 grams Grapeseed Oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 330 grams bakers plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon bicarb soda
  • 50 grams Milk
  • 2 teaspoons cinnamon
  • 2 tablespoons chia seeds

Recipe's preparation

    Preparation
  1. Preheat fan forced oven to 180 degrees.

  2. Mill sugar 10 secs speed 9.

  3. Add bananas, oil, vanilla and eggs.

  4. Beat 10 secs speed 6.

  5. Add flour,  baking powder, bicarb and milk.

  6. Mix together slowly increasing speed from 1 to 6 for 3 secs each speed.

  7. Add cinnamon and chia seeds.

  8. Mix 20 secs speed 4.

  9. Divide into a 12 muffin tray (I got 16 muffins out of this batter).

  10. Bake for 18-20 mins or until you can poke the muffins with a skewer and it comes out clean.

Tip

Instead of bakers plain flour and baking powder, can use 330 grams of self raising flour instead.

These muffins freeze really well, good for lunches.

    Delish. Passed the test of kids, they loved them. I switched out the oil for coconut oil and the raw sugar for coconut sugar. Also my bananas weren't overly ripe so added a TBS of maple syrup. Yummo!!

    Easy peasy. Freeze well for lunch boxes. I also got 16.
