Ingredients

Choc, Hazelnut Banana Bread

  • 80 g hazelnuts
  • 4 Bananas, ripe
  • 125 g Butter, unsalted
  • 1 tsp vanilla extract
  • 140 g brown sugar
  • 2 eggs, room temperature
  • 50 g golden syrup
  • 150 g Dark Choc Bits
  • 255 g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda

Recipe's preparation

  1. Place 80g hazelnuts into mixing bowl, insert MC into mixing bowl lid.  Dry roast 4mins/Varoma/Speed 1.  Allow bowl to cool slightly.

     

     

  2. Roughly chop hazelnuts 0.5sec/turbo and set aside in separate bowl

     

  3. Place bananas in mixing bowl, insert MC into mixing bowl lid and mash 10secs/speed 5 – set aside in separate bowl.  Clean and dry mixing bowl.

     

  4. Add butter, sugar and vanilla to mixing bowl and mix 3mins/speed 5, if the mixture sticks to the sides, scrape down with spatula and continue to mix.

     

     

  5. With blade on speed 5, add eggs, one at a time through the mixing bowl lid, allowing 5-10secs in between.

     

     

  6. Add golden syrup and mashed banana, insert MC into mixing bowl lid and combine 45secs/speed 5.

     

  7. Add dry ingredients and chocolate bits, stir through with your spatula until just combined.  This will need to be done by hand.

     

  8. Lightly grease a loaf pan and transfer mixture into prepared pan.

     

  9. Preheat oven to 160 degrees, allowing mixture to rest in tin as oven heats.

     

  10. Bake for 50-60mins or until bread is golden brown and a skewer inserted comes out clean. Allow to cool for 5mins before removing from tin.

Slice this and then freeze in slices.
