Ingredients

Cookies

  • 50 gram raw sugar
  • 100 gram unsalted butter, cut into cubes
  • 75 gram brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 75 gram plain flour
  • 75 gram rolled oats
  • 35 gram good quality cocoa powder
  • 1/2 teaspoon bicarbonate soda
  • 125 gram chocolate chips, milk or dark

Recipe's preparation

    Cookies
  1. Preheat Oven to 180 degrees


    Weigh in raw sugar and process on speed 9 for 3 seconds.


    Add butter and brown sugar and beat for 30 seconds on speed 4.  Scrape down sides and repeat twice (looking for a thick and pale result).


    Add vanilla extract and egg and beat for 30 seconds on speed 4.


    Place a bowl on top of TM and set scales to zero.  Weigh in remaining dry ingredients except choc chips and combine with a spoon.


    Set speed to 3 and slowly add the dry ingredients through the hole in the lid stopping and scraping the sides as needed.


    When it’s all mixed together weigh in the choc chips and set to Dough mode"Dough mode" interval speed for 15 seconds or until all the choc chips are folded in.


    Pinch out handfuls of batter and roll into ping-pong ball size cookies.  Very slightly flatten them before spacing them wide apart on the baking trays and cook for 10-15 minutes.  When they are done they will have spread into big, flattish, but still squidgy discs.  They will feel soft to the touch but will harden a little (not too much) as they cool.  Once cooked, remove cookies from the oven and stand on the trays for 30-60 seconds.  Then remove with a thin spatula or palette knife to a wire rack to cool.

Tip

Quantity doubles well.


Prepare dough balls and freeze in layers on baking paper in an airtight container.  Defrost and bake as needed.
