Ingredients
Batter
- 125 grams unsalted butter, melted
- 3 bananas, medium
- 2 eggs
- 1 teaspoon vanilla extract
- 300 grams plain flour, or GF flour or spelt
- 2 teaspoons baking powder
- 150-220 grams sugar
- 200 grams Dark Choc Bits
- icing sugar, to dust

Add butter to the bowl, 2 mins/50/speed 2
Add bananas to bowl, 5 sec/speed 4
Add eggs and vanilla and mix 3 secs/speed 4
Add flour, baking powder, sugar (see tip) mix 5 secs/ speed 5
Scrape down sides of bowl and add choc bits 10 secs/"Counter-clockwise operation" /speed 2 do not over combine, mixture should be just combined.
Pour into prepared tin and bake for 1 hour 15 mins. Dust with icing sugar and serve warm
pre heat oven to 180 degree, grease a loaf tin (24x13x7cm)
Tip
original recipe asked for 220gm of caster sugar, I have reduced this to 150gm and used raw sugar, so feel free to play around to suit you.
I have also made this using GF flour and spelt flour and it works well.
I have also used frozen bananas and they work well too.
