Ingredients
Soup
- 2-3 tablespoons coconut oil/ghee/macadamia nut oil
- 1 onion, halved
- 5 centimetre ginger, peeled
- 2 celery stalks
- 2 tablespoons coriander stalks
- 3-4 coriander roots, optional
- 1.5 teaspoons ground cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon curry powder
- 270 grams red lentils
- 250 grams sweet potato, peeled and roughly chopped
- 1-2 tablespoons Vegetable Stock Concentrate (EDC)
- 750 grams water, approx, to make up to 2 litre mark
- 2 teaspoons mirin
- 2 teaspoons tamari or soy sauce
- 1-2 tablespoons coriander leaves, chopped
- lime wedges, optional

Add onion, celery, ginger, coriander stems and coriander roots (if using) to bowl and chop on speed 5 for 3-4 seconds. Scrape down bowl.
Add enough coconut oil/ghee/macadamia oil to cover ingredients, cook 3 mins/varoma/speed 2.
Add ground cumin, ground coriander and curry powder, cook 1 min/varoma/speed 2.
Add lentils, sweet potato, stock concentrate and water, cook 35 mins/100/speed 2.
Add mirin and tamari and mix 3 sec/ speed 3
Pour into Thermoserver or straight into bowls. Serve with Chopped coriander leaves and lime wedges
Method
Tip
The lime wedges are optional but the lime juice just makes it a more interesting soup.
Great served with warm fresh bread, to suit your dietary needs
