Ingredients
Chicken and sweet corn soup
- 850 grams fresh sweet corn kernels, removed from cob
- 1 litre Liquid Chicken Stock
- 50 grams coconut milk
- 20 grams soy sauce
- 1 level tsp ginger paste
- 1 pinch Freshly ground black pepper
- 250 grams chicken breast, cut into large pieces
- 1 tbsp cornflour, Mixed in 2 Tbsp water
- 30 grams spring onion, White part only - save the green for garnish
- 2 egg whites, whisked
- 1/2 tsp salt, to taste

- Add half the corn. Blend 5 sec/speed 7/MC on.
- Scrape bowl and lid
- Add Liquid stock, coconut milk, soy sauce, ginder, and pepper. Insert simmering basket and add chicken. Cook 20min/ 100°c/speed2/MC on
- Remove chicken and set aside. Remove simmering basket. Add conflour mixture and blend gradually 30 sec/speed 7/ MC on
- Add reserved corn and spring onion. Cook 3 min/100°c. Set aside in Thermoserver, and slowly stir in the whisked egg white with a fork
- Add the chicken back to the bowl and shred 3-5 sec/speed 4/
"Counter-clockwise operation" /mc on (or until desired consistence is achieved) - Stir the shreded chicked through the broth, add salt, and top with green sping onions to serve
