Thai pumpkin soup

  • 2 garlic cloves ---

  • 2 birds eye chillies ---
  • 2 level teaspoons cumin seeds ---
  • 1kg pumpkin ---
  • 2 carrot ---
  • 1 to 1.5 home made chicken or vegetable stock level tbsp
  • 400ml coconut milk cans
  • 1 peanut oil level tbsp

    Chop onion, garlic and chilli
  1. Slow Cooking"Slow Cooking" 5 seconds Blend"Blend" speed5

  2. Scrape down bowl, add cumin seeds and oil
    Slow Cooking"Slow Cooking" 3 mins Sous-vide"Sous-vide" 100degrees Blend"Blend" speed 2

  3. Chop carrot and pumpkin into 3 cm pieces, removing skin. Weigh into bowl.

  4. Scrape down sides of bowl. Add 500mls of water and stock.

    MC off, place basket instead to avoid splatter.

  5. replace basket with MC.
    Set timer for 1 min Slow Cooking"Slow Cooking" speed 3Blend"Blend" increase speed upto 9 as the minute decreases.

  6. Add coconut milk Slow Cooking"Slow Cooking" 1 min Sous-vide"Sous-vide" 100 degrees Blend"Blend" speed 3 to mix coconut milk through the soup.

  7. Enjoy.
