Outback Steakhouse Potato Soup
- 80 g Bacon, diced, pat dry
- 2 g olive oil
- 4 potatoes, medium size, approx. 750g, cut into 3 cm pieces
- 1 onion, quartered
- 4 cloves garlic
- 2 celery stalk, cut into 4 cm pieces
- 1 carrot, cut into 4 cm pieces
- 3 tbsp unsalted butter
- 60 g flour
- 750 g chicken broth
- 200 g thickened cream
- 1 tsp Garlic powder
- 1 tsp dried oregano, thyme or basil can be used also
- 1 tbsp Vegetable stock paste
- 1/2 tsp pepper, ground
- 120 g Cheddar cheese, smoked, grated
- 3 stalks spring onions, sliced

- Place the bacon in the Thermomix bowl. Add 2g olive oil. Cook at Varoma temperature for 5-8 minutes, speed "Gentle stir setting" until crispy. Cook for longer until desiered crispiness is achieved. Place in a small bowl and set aside. Do not clean bowl. Scrape base of mixing bowl well with spatula to loosen any caramelisation.
- Add quartered onion, garlic, celery, and carrot to the Thermomix bowl. Chop for 5 seconds at speed 5. Scrape down the sides of the bowl.
- Add the butter to the chopped vegetables in the Thermomix bowl. Sauté at 100°C for 5 minutes, speed 0.5, Reverse until the vegetables are softened.
- Sprinkle the flour over the sautéed vegetables. Cook at 100°C for 2 minutes, speed 2, Reverse.
- Add the diced potatoes, chicken broth, garlic powder, dried herbs, vegetable stock paste, and pepper into the Thermomix bowl. Cook at 100°C for 20 minutes, speed 1, Reverse, cook for longer if required until potatoes are tender.
- Add the thickened cream to the soup. Blend at speed 5 for 20-30 seconds, until the soup reaches your desired consistency. If you prefer a chunkier soup, blend for a shorter time or pulse at speed 4.
- Adjust seasoning if required. Ladle the potato soup into bowls. Garnish with shredded cheddar cheese, crispy bacon bits, and sliced spring onions. Serve hot.
