Ingredients
Chicken Banana Curry
- 500 g water
- 750 g skinless chicken thigh, diced (2 cm)
- 300 g potato, peeled and cut into pieces (2 cm)
- 200 g pumpkin, peeled and cut into pieces (2 cm)
- 1 tbsp extra virgin olive oil
- 1 onion
- 2 teaspoons ginger paste
- 2 tablespoons curry powder
- 1 tbsp all spice
- 2 tablespoons tomato paste
- 1 tbsp Vegetable stock paste
- 1 tbsp Butter
- 1 can coconut milk
- 2 bananas, cut into pieces (2 cm)

- Place 500g water into mixing bowl. Insert simmering basket and weigh 300 potatoes and 200 pumpkin into it. Sprinkle with salt, then steam 15 min/100°C/speed 2. Remove simmering basket with aid of spatula and set aside. Rinse and dry mixing bowl.
- Add 1 tbsp oil, 1 onion, 2 tsp ginger paste, 2 tbsp curry powder, 1 tbsp all spice, 2 tblsp tomato paste and chop 3 sec/speed 7, then cook 3 min/90°C/speed 1. Scrape down lid and sides of mixing bowl with spatula.
- Add 1 tbsp butter and 750g chicken and cook 3 min/90°C/"Counter-clockwise operation" /speed 1.
- Add 1 can coconut cream, 1 tblsp vegetable stock paste and reserved steamed potatoes and pumpkin, then cook 15 min/90°C/"Counter-clockwise operation" /speed 1, without measuring cup.
- Add 2 bananas (cut) then cook 4 min/90°C/"Counter-clockwise operation" /speed 1, without measuring cup, or until chicken is cooked to your liking. Divide between serving bowls, serve with rice.
Tip
Vegetable stock paste and ginger paste recipes can be found on Cookidoo. Vegetable stock paste can be subtituted with whatever vegetable stock you use, ginger paste can be substituted with fresh ginger.
Serve with rice; pre-cook rice and place in Thermomix serving bowl to keep warm ready for serving.
Can also be served with steamed vegetables.
This is a perfect first curry for your baby/toddler. Add chilli to your serving for extra flavour.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
