Recipe's preparation

  1. Preheat oven to 175 degrees Celsius.

Combine ground almonds, brown rice flour, baking powder, cocoa, cinnamon and salt together in a mixing bowl.

In a Thermomix combine dates, beetroot, oil and eggs until a batter is formed. Speed 7 for 25 seconds.

Stir this spectacularly pink batter into the dry ingredients. You can hardly believe there is no artifical food colouring! Stir in chopped walnuts (speed 6 for 3-5 seconds) and pomegranate jewels.

Spread mixture into an oiled baking tray and top with more pomegrante seeds (and a sprinkling of raw sugar if you like).

Bake in the oven for 25-30 minutes. Allow to cool before slicing and devouring.

    Keep refridgerated.
