CHOCOLATE BISCOTTI
- 200 g plain flour
- 150 g raw, sugar
- 50 g dark chocolate pieces
- 1 tsp baking powder
- 30 g cocoa powder
- 50 g pistachios
- 100 g raw whole almonds
- 3 egg whites
- 20 g honey

Preheat oven to 180 degrees.
Place raw sugar into bowl, mill for 3 seconds, Speed 9, set aside
Place chocolate into bowl, mill for 3 seconds, Speed 9, set aside
Place butterfly into bowl, add egg whites, set time for 3 minutes, Speed 4 - when soft peaks form (after approx a minute or so) slowly add caster sugar a spoonful at a time (through the lid) until mix is white and glossy
Remove butterfly whisk and add flour, baking powder, cocoa powder and grated chocolate and mix for 6 seconds, Speed 4 until combined.
Scrape down sides and add nuts, mix for a further 6 seconds, Speed 4. Mix should be well combined.
Turn out mixture onto Thermomat and separate in half. Form mixture into two logs.
Place logs on baking tray with either baking paper or Oven Mat.
Bake at 180 deg for 20 - 30 minutes.
Remove biscotti logs from oven and allow to cool completed. Use a sharp knife to cut into 1cm slices.
Lower oven temp to 140 degrees.
Place slices back on baking tray and bake for 10 minutes at 140 deg, carefully turn slices and bake for a further 10 minutes.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Thanks for the recipe. Family enjoyed the biscotti. Just a couple of comments. When the egg whites and sugar were combined and the other ingredients were added the mixture would not combine as it had hardened around the blades and prevented them from rotating. Therefore I needed to remove the mixture from the bowl and break it up and reinsert back into the bowl in order to properly combine it.Im not sure if this was a result of me doing something that I shouldnt have. Just the other minor issue. there is no mention as to when the honey should be added so I just included it with the flour etc. Once again thanks for this delicious recipe and Im chomping on some whilst Im writing these comments.
