Ingredients

Chocolate Brownies

  • 100 g dark chocolate
  • 100 g cocoa powder
  • 170 g plain flour
  • 1 tsp baking powder
  • 240 g sugar
  • 140 g Unsalted butter, softened
  • 1 tsp vanilla extract
  • 4 eggs
  • 70 g sunflower seeds

Recipe's preparation

  1. Pre-heat oven to 160°C. Line a deep-sided baking tin (25 cm) with baking paper and set aside.

  2. Place chocolate into mixing bowl and mill 5 sec/speed 10.

  3. Add cocoa, flour and baking powder and mix 5 sec/speed 5. Transfer into a bowl and set aside. Clean and dry mixing bowl.

  4. Place sugar into mixing bowl and mill 5 sec/speed 9.

  5. Add butter and heat 1 min/50°C/speed 4.

  6. Add all remaining ingredients including reserved cocoa mixture and mix 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.

  7. Mix 10 sec/speed 5.

  8. Spread mixture into prepared tin. Place a sheet of baking paper over the top and smoothly press out mixture. Remove top sheet of paper and bake (160°C) for 10 –15 minutes, then allow to cool and set in baking tin. Refrigerate before cutting into squares

Tip

This is a tweaked version of the Chocolate brownies recipe on page 133 of Devil of a Cookbook.

The mixture will still be soft after coming out of the oven but will set when cold.

The brownies can be iced with your favourite chocolate icing or dusted with cocoa powder before slicing.
