Ingredients

BASE

  • 125 grams Butter
  • 90 grams dessicated coconut
  • 150 grams self-raising flour
  • 210 grams white sugar
  • 20 grams cocoa powder, 70% cocoa

ICING

  • 200 grams icing sugar
  • 5 grams cocoa powder, 70% cocoa
  • 20 grams Butter
  • 25 grams full cream milk
  • either sprinkles or shredded coconut to decorate

Recipe's preparation

    BASE
  1. Preheat oven to 190°C
  2. Add Butter to Closed lid"Closed lid" , Melt 2 minutes, 70°C, speed 2
  3. Add the remaining base ingredients to Closed lid"Closed lid" . Mix 5 seconds, speed 4 No counter-clockwise operation"No counter-clockwise operation" . Scrape down the sides of the bowl & repeat if necessary.
  4. Spoon into a greased & lined slice tray. Press down & flatten with the back of the spoon until level.
  5. Bake at 190°C for 12 to 15 minutes. Allow to cool
  6. ICING
  7. Put all the ingredients into Closed lid"Closed lid" & mix 5 seconds, speed 4. Scrape down the sides of the bowl & repeat if necessary.
  8. Smooth icing over the top of the cooled slice & sprinkle with either 100 & 1000's or shredded coconut
  9. Allow icing to set at room temperature for an hour (will not set totally hard but will be easier to cut). Cut into squares to serve.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
