Ingredients
Chocolate Fudge Brownies
- 125 g unsalted butter
- 180 g raw sugar
- 2 eggs
- 1 pinch salt
- 50 g cocoa powder, 70% cocoa
- 100 g plain flour
- 75 g White Chocolate Chips
- 75 g milk chocolate chips

- Preheat oven to 160 degrees (fan forced)
1. Melt butter at 60 degrees for 4 mins at speed 2
2. Add sugar. Mix on speed 3-4 for 15 secs.
3. Add eggs. Mix on speed 3-4 for further 15 secs.
4. Add salt, cocoa, flour. Mix on speed 3-4 for 30 secs until thoroughly mixed. Scrape down sides if needed. Mix for extra 10 secs if needed.
5. Add choc chips. Mix on reverse speed 2-3 for 30 secs
6. Pour mixture into a slice tin.
7. Cook for 18-22 mins (depending on oven and thickness of mixture and also how gooey you like your brownies)
8. Allow to cool slightly and then put in the fridge overnight to set.
Method
Tip
It may feel a bit undercooked when you take it out of the oven. Leave it in the fridge overnight and it sets into a lovely silky fudge texture.
If you don't want to add choc chips, minus the choc chips and make these additions:
150g unsalted butter
260g raw sugar
60g cocoa
140g plain flour

My very first item made in my new Thermie (TM5)... love it!
I also reduced the sugar as mentioned in the other comment to 150g & only used milk/dark choc as didn't have any white on hand.

Wow! Absolutely loved these. Received wonderful feedback from guests (adults and children!)
In case anyone is interested, I reduced sugar to 150g. Still plenty sweet enough!
I will be making these again and again.
