Ingredients

Cake Batter

  • 1 Whole orange, peeled
  • 110 grams Butter, softened
  • 2 eggs
  • 110 grams dates, pitted
  • 170 grams water
  • 250 grams flour
  • 1/2 tbsp baking soda
  • 1 tsp vanilla essence
  • 1 pinch salt
  • 250 g bittersweet chocolate, broken into pieces
  • 1 Cup of Sugar

Recipe's preparation

    Method.
  1. Pre-heat oven to 180 degrees & line and grease a 23cm round tin.

  2. Place butterfly into mixing bowl and add butter and sugar. Cream butter and sugar 2mins / speed 4. With blades running on speed 4 add one egg at a time through mixing bowl lid with 20 seconds between the two. Set aside. Wash mixing bowl.

  3. Add dates to mixing bowl and chop 10 seconds / speed 10. Use spatula and scrape down sides of the bowl. Add orange, water and baking soda and mix 20 seconds / speed 7. Repeat if necessary to make sure there are no lumps of orange.

  4. Insert butterfly. Add the butter mixture to the bowl along with flour, vanilla and salt. Mix 20 seconds / speed 4. Pour batter into prepared tin.

  5. Poke broken up pieces of chocolate into cake batter and smooth over.

  6. Bake in the centre of the oven for 40-50 minutes. Leave to cool slightly then transfer to serving plate or chopping board to slice and serve.
