Ingredients

  • 1 zucchini, Chopped in 2cm pieces
  • 120 g Butter
  • 100 g vegetable oil
  • 350 g caster sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Half teaspoon baking powder
  • Half teaspoon salt
  • 2 Eggs (Large)
  • 110 g sour cream
  • 350 g wholemeal plain flour
  • 70 g Cocoa / Cacao Powder

Recipe's preparation

    Method:
  1. 1. Preheat Oven to 200C Fan Forced; Prepare a 25cm Spring Form tin, with Baking Paper;

  2. 2. Place Zucchini in the Jug and grate Speed 6 for 3 seconds; set aside.

  3. 3. Put Butter, Oil, Sugar, Vanilla, Baking Soda, Baking Powder, Salt and Eggs and mix on Speed 5.5 for 10 seconds.

  4. 4. Add Sour Cream, Flour, Cocoa and Zucchini and mix on Speed 5.5 for 15 seconds.

  5. 5. Pour batter into the baking tin;

  6. 6. Bake for 40 - 45 minutes. Test centre of cake with a skewer to see if it is done.

    Allow the Cake to sit in the tin for 5 minutes, before removing to cool completely on a wire rack.

This is a sneaky Veggie Smuggling cake!
