Ingredients

Chocolate and Zucchini Muffins

  • 200 g zucchini, trimmed and cut into pieces
  • 90 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 100 g raw sugar, *see tip
  • 130 g plain flour
  • 30 g cocoa powder (70% cocoa)
  • 2 tsp baking powder
  • 1/4 tsp salt

Recipe's preparation

  1. Preheat oven to 180 degree celsius

    Line 12 hole muffin tin with muffin cases

    Place zucchini pieces into mixing bowl and chop on speed 5 for 2 seconds
    Scrape sides with spatula and repeat

    Add oil, eggs, vanilla, sugar (see tip) and mix on speed 4 for 5 seconds

    Add flour, cocoa, baking powder, and salt - reverse speed 3 for 10 seconds.
    Mix with spatula if needed

    Divide mix into muffin cases

    Bake for approximately 20 minutes or until cooked

Tip

I don't like my cakes very sweet, so if you prefer a sweeter muffin add more sugar - original recipe had 3/4 cup sugar (135g)

    Tongue These are most moist and easy to make. Freeze well. I occasionally add extras like currants or nuts. Really delicious!!

    Thank you for this recipe. My fussy daughter had no idea there was zucchini in it. She's a sweet tooth so next time I probably will add the extra sugar that you mentioned in your tip. I also used half plain flour and half wholemeal plain flour. She gobbled them up!
