Ingredients
Scroll Dough
- 250 grams Milk
- 50 grams Butter
- 2 teaspoons dry yeast or 20g fresh yeast
- 430 grams bakers flour
- 1/4 teaspoon salt
- 70 grams raw sugar
- 1/2 teaspoon cardamom
Scroll Filling
- 2 tablespoon Butter
- 2 tablespoon sugar
- 2 teaspoon cinnamon

Scroll Dough
1. Add butter, milk and yeast to TM bowl and heat 2min/37C/speed 2.
2. Add flour, salt, sugar and cardamom and mix 6 sec/speed 6, then knead 2 min / .
3. Dough will be slightly sticky. Transfer dough into a bowl and gently form into a ball. Cover with a tea towel/plastic wrap. Leave to prove in a warm place for 40 min or until doubled in size.
4. Transfer dough to lightly floured bench top. Roll into 1/2cm thick rectangle.
5. Spread softened butter over dough, sprinkle with cinnamon and sugar, then roll into a log and slice into 12 equal slices (scrolls).
6. Transfer scrolls to a baking tray lined with baking paper. Let them rise again for 30 min, or until nearly doubled in size.
7. Pre heat oven. For buns bake at 225-250 degrees for 5-10 mins. For plaits or larger rolls, 200-225 degrees for 15-20 mins.
9. When they have risen for the second time, place in oven and bake until just golden brown.
Method
Tip
Dairy free option- replace milk with Soy, nut or rice milk, replace butter with coconut oil, or ghee.
Options- excellent with white spelt instead of plain flour. Can use coconut sugar for a non refined sugar alternative. Also excellent with honey instead of sugar!
Decoration options - sprinkle with chopped almonds, or baste with whipped egg before baking for shiny finish.
When baking a plait, take care as outside can be brown yet inside raw, adapt temperature and time in oven for size of Plait.

So tasty, hot out of the oven & demolished within 10 mins. I made an icing sugar drizzle over the top. Definitely a hit in our house & have added it to my favourites.

Made these for Sunday morning breaky and they were gone by the evening. They are delicious. I love it as it has a good balance of filling without being sickly sweet
I always need to make two batches ha ha I love them. Of course never as good as mums!
