Ingredients

  • 220 gram raw sugar
  • 80 gram Shredded coconut
  • 250 gram butter (softened and roughly chopped)
  • 4 eggs
  • 220g gram GF SR Flour, (I use Aldi Has No Brand)
  • 2 --- lemons (juice only)
  • 40 gram coconut oil
  • frozen raspberries

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Line two x lamington/slice trays with baking paper and set aside.

  2. Place raw sugar in TM bowl and mill 10sec/sp 9

  3. Add butter to TM bowl and mix 30sec/sp 5

  4. With blades rotating on sp 4, add eggs one at a time thru hole in lid and mix until combined.

  5. Add flour, lemon juice, shredded coconut and coconut oil and mix 30sec/sp 5

  6. Divide batter between 2 prepared slice tins and top with frozen raspberries.

  7. Place in oven and cook until golden brown (approx 25 mins)

  8. Enjoy - delicious straight from the oven or cooled and topped with icing sugar or citrus syrup.

Tip

Use whatever frozen fruit you like in this recipe, my favourite is frozen raspberries!

 

I have used two slice trays to make a thin slice like dish, but if you wanted to use a cake tin instead you could, but the cooking time would be longer (just use a skewer in mixture to test if it is cooked)
