Gluten Free Fruit Toast
- 2 pieces orange peel
- 100 grams sugar, castor or raw
- 540 grams Gluten free plain flour, white wings brand
- 1 teaspoons baking powder
- 1 teaspoons mixed spice
- 2 teaspoons ground cinnamon
- 1 teaspoons xanthan gum
- 50 grams Butter
- 375 grams Milk
- 1 tablespoons dried instant yeast
- 2 eggs
- 100-200 grams dried fruit of choice, eg sultanas, apricots, cranberries

- Add orange peel and sugar to the bowl and mix 10 seconds/speed 9.
- Add flour, baking powder, mixed spices, cinnamon and xanthan gum to the bowl and mix 5 seconds/speed 5 and set aside into separate bowl.
- Add butter, milk and dry yeast to the bowl and heat for 4 mins/40/speed 2.
- Add dry ingredients (set aside earlier) and 2 eggs to the mixing bowl and knead for 1 minute.
- Add dried fruit to the bowl and knead for 30 seconds.
- Pour mixture into prepared bread tin and leave to rise for approx 30 mins, or until doubled in size.
- Bake in 200 degree oven for 30 mins or until dark brown and hollow sound when tapped. Allow to cool before slicing - can be frozen
